Dinner to Celebrate Autumn's Harvest

We’ve been dreaming of a season-forward gathering around our long tables ever since Chef Tobia Buggiani popped up at HXH with two sold-out summer pizza happenings. Just like that, it's nearly autumn, so why not gather and celebrate? Chef Tobia is returning with a five-course tasting menu and wine pairing dinner. Terra e Mani (Earth and Hand) is an invitation to spend a slow evening enjoying the season's flavors and experiencing the rich connection between earth, hand, and table here in Central New York.

Born in Rome, Italy, Chef Tobia began his culinary career two decades ago, driven by the art of making food from scratch with deep respect for local agriculture and culinary tradition. Over the past 20 years—which includes collaborating with farm-to-table pioneer Larry Forgione on artisanal grain and dough development—Chef Tobia has remained committed to cooking in close harmony with regional producers and seasonal harvests.

 

Terra e Mani channels this philosophy into a focused five-course autumn tasting menu rooted in seasonality and place. The dinner is crafted almost entirely from locally sourced, organic, and wild-foraged ingredients—from woodland mushrooms and stone-ground grains to orchard fruits and regional cheeses. Each course is thoughtfully paired with wine selected from some of the Finger Lakes most creative winemakers. Expect an evening dedicated to craftsmanship, regional terroir, and the simple beauty of food made by hand, unfolding in a space that holds that same heritage.

 


While the menu gathers the flavors of the season plate by plate, guests will gather to eat in the Gallerie, a nineteenth-century board-formed concrete building, fashioned by hand. A beanery in its former life, HXH is itself a living testament to the region's growers, producers, and makers. The tables will be set with pottery handmade and fired on the premises at HXH, and layered with wild floral arrangements by Alex Abuza of Wilder Gardens + Flowers in Moravia. Her locally sourced and foraged flowers offer another opening to an evening that honors place and time.
